Rosemary Roast Pork

On the menu today is roast pork on a bed of roast potatoes. I actually got this recipe from my usual trial and error. I had a few sprigs of rosemary at home that I had used in roasting lamb a few days earlier and I had bought fresh pork to make a sauce with, and I just thought, hey! Why not continue with the roasting? Of course there were a few Irish potatoes lying about and those found their way into the recipe, simple but delicious I must tell you. I don’t think any other recipe can beat the simplicity of this one, aside from the time it took to marinate and roast the meat, preparation of this recipe can be done and dusted in 5 minutes.

Everyone in your family, will want a serving because of the aroma and taste that the marriage between the rosemary, garlic and scotch bonnet peppers brings to this dish. I usually just serve it, then sit and watch the reactions on people’s faces. It is always priceless I must tell you, I always get it right when I use Rosemary. This fragrant herb can be used in stews, sauces, oils - to make them fragrant, roasts (chicken, lamb, beef and of course pork)



Rosemary (Rosmarinus officinalis) is a fragrant green herb with a needle like leaves and a distinctive flavor.  Native to the Mediterranean region,  Rosemary is part of the mint family Lamiaceae,  which consists of other herbs such as thyme, basil and oregano. As stated by organicfacts.net, using Rosemary on a regular basis in our meals, helps improve our memory, improve our mood and stress, strengthen our immune system, stimulate blood flow and serve as a source of pain relief! Rosemary also has anti-inflammatory, anti-aging as well as detoxifying properties. What’s not to love about this amazing herb with its distinctive aroma and taste?

Ingredients

1) Fresh pork 1Kg or any meat of your choice

2) Potatoes 300g

3) Medium sized onion

4) Rosemary herb (3 sprigs)

5) Scotch bonnets ( Atarodo) as desired

6) Garlic 5g or quartered bulb

7) Seasoning 8g

8) Salt 2g

Directions
1) Prepare the ingredients by washing them thoroughly, especially the pork

2) Now add the rosemary, garlic, onions and just enough water to allow the blender work smoothly, now blend into a smooth running paste.










Cooks tip: This will serve as the marinade for the meat and potatoes. This marinade, is about all you need for this recipe, that’s about all the work done
3) Add in the seasoning and salt into the blender and blend one more time until it is well mixed

4) Now pour part of the rosemary paste/marinade into the meat, and rub it all over the meat, cover this with a cling film and pop in the fridge to marinate for 1 or 2 hours.

Cooks tip: You can prepare the marinade late at night, to give the meat longer time to marinate. This is so that the paste is deeply infused in the meat. I used the leg of pork so i had to make cuts and pockets









5) Now pour in the rest of the paste into the potatoes, coat them evenly and pop into a roasting dish. Create space for the pork meat and set it in the middle of the baking dish.

6) Pop this into the oven and bake at 180 degrees for 1 hour and your rosemary roast pork is ready! This recipe is pretty straight forward. Get cooking now and let me know what you think.
